  • 3/4 cup smooth peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup dark-brown sugar - (packed)
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract

  2. Using a 1 1/2-ounce ice-cream scoop, form dough, and place on a baking sheet lined with a nonstick baking mat, pressing down slightly to flatten. Bake until golden brown, 18 to 20 minutes. Transfer to a wire rack to cool. Store in an airtight container up to 1 week.
