Microwave Chocolate Pudding

4 servings Source yield

Ingredients

  • ⅓ cup (80 g) white granulated sugar or sugar substitute
  • ¼ cup (60 g) unsweetened cocoa powder
  • 3 Tbsp cornstarch
  • ⅛ tsp salt
  • 2 cups (480 ml) milk or soy milk
  • 1 tsp vanilla extract or imitation vanilla

Make it step by step

  1. In a 1-qt microwave-safe bowl, mix the dry ingredients together.
  2. Add the cold milk and mix well with a small wire whisk or an electric mixer until all the cocoa lumps have dissolved.
  3. Microwave in the bowl, on high (100%) power, for 3 minutes. Stir well.
  4. Microwave, again on high power, for an additional 4–6 minutes, stirring after each minute of cooking.
  5. Remove the bowl from the microwave oven and stir in the vanilla.
  6. Pour the result into 4 small custard cups and chill before serving.
  7. Safety note: Keep a close watch on the pudding during the actual cooking, as it can easily boil over.
