Ingredients
- 60 ml blanco tequila, 100 per cent agave
- 15 ml lime juice, freshly squeezed
- 1 pinch of fine salt
- 120 ml grapefruit soda, well chilled
- Ice cubes, for serving
- 1 tbsp flaky sea salt, for the rim, optional
- 1 grapefruit wedge, to garnish
Make it step by step
- Salt half the rim of a tall glass if you want it, running a lime wedge round the outside first.
- Fill the glass with ice.
- Pour in the tequila and lime juice and add the pinch of fine salt.
- Stir briefly to dissolve the salt, before the soda goes in.
- Top with the grapefruit soda, pouring down the side of the glass.
- Give it one gentle turn with a bar spoon, lifting from the bottom rather than stirring in circles.
- Tuck in the grapefruit wedge.
