Ingredients

  • 120 ml white rum
  • 120 ml cream of coconut
  • 180 ml pineapple juice, or 200g frozen pineapple chunks
  • 25 ml lime juice, freshly squeezed
  • 300 g ice, or less if using frozen pineapple
  • 2 pineapple wedges, to garnish

Make it step by step

  1. Put the rum, cream of coconut, pineapple, lime juice and ice into a blender.
  2. Blend on high for 30-40 seconds, until completely smooth and thick.
  3. Check the texture: it should hold the trace of a spoon for a second. Add a handful more ice and blend again if it is thin.
  4. Pour into two chilled tall glasses.
  5. Set a pineapple wedge on each rim and serve immediately.
