Basic Tuiles

4 servings Source yield

Ingredients

  • 2 eggs
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter
  • 1/4 cup flour

Make it step by step

  1. Whip the egg whites into soft peaks, and slowly beat in half a cup of powdered sugar or superfine sugar.
  2. Slowly fold in a quarter cup of melted unsalted butter, along with a quarter cup of flour, adding the ingredients slowly so that the mixture does not become unworkable. Then, spoon mounds of the batter onto a cookie pan lined with parchment, or a silicone baking sheet, and flatten them slightly with the back of the spoon.
  3. Bake in a 350 degree F oven until golden (about 7 minutes), and mold immediately.
