Ingredients
- 4 cloves garlic, chopped fine
- 1 onion chopped fine
- 4 big or 5 medium sized potatoes, peeled & grated
- 1 veg. maggi cube (optional)
- 7-8 leaves of palak/spinach, cut in thin strips
- 1 small grated carrot (optional)
- ¼ cup grated cheese
- 1/2 tsp pepper freshly ground
- 1 tblspn finely diced red and yellow capsicum (optional)
- 2 green chilies (optional)
- 1 tsp Oil (or butter)
Make it step by step
- In a thick bottomed pan heat the oil and add fry the garlic till crisp.
- Add the onion and fry till translucent.
- Add 4 -5 cups of water and bring to a boil.
- Add the grated potato. At this point I switched off the gas and dipped the immersion mixer and blended the soup till it was quite smooth.
- Boil well.
- Just before serving add the palak/spinach, carrot, capsicum, green chilies and grated cheese.
- Swirl and serve hot. Today we are having it just plain but you can serve it with toast or garlic bread or cheese toast.
- P.S. All that are marked optional are my additions you can make do without them but are recommended.
- Enjoy!!
