Ingredients
- 3 1/2 pounds chicken fryer, cut into pieces
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup flour
- 2 eggs
- 1/2 - 1 c. beer
- 2 tablespoons melted butter
- 2 tablespoons minced parsley
- Fat for deep frying
Make it step by step
- Season the chicken pieces with the salt and pepper. Make a smooth mixture of the flour, eggs and melted butter. Then add as much beer as necessary to make a smooth rather than thick batter. Add the minced parsley. Coat the chicken pieces with the batter heavily and let chill 1 hour in the refrigerator. Heat the fat to 375 degrees and deep fry the chicken until golden brown. Drain and place in a shallow baking pan. Bake in a preheated 350 degree oven for 30 minutes or until tender. Serves 4.
