Mushroom, Onion and Seitan Stir-Fry

4 servings Source yield

Ingredients

  • 1 1/2 tablespoons olive oil
  • 2 large onions, quartered and sliced
  • 2 mediums garlic cloves, minced
  • 10 ounces button or cremini mushrooms, up to 12 oz, thinly sliced
  • 1 pound marinated seitan, cut into bite-size chunks
  • 1 cup frozen baby green peas, thawed
  • 1/4 cup bottled stir-fry sauce, or to taste
  • 1/4 teaspoon freshly ground pepper

Make it step by step

  1. In large skillet, heat oil over medium heat. Add onions and cook, stirring often, until golden, about 14 minutes. Add garlic and cook, stirring, 1 minute. Add mushrooms, then cover and cook, stirring once or twice, until softened and juices are released, 5 to 7 minutes.
  2. Stir in seitan, peas and stir-fry sauce. Increase heat to medium-high and stir-fry until mixture is heated through, about 5 minutes. Season with pepper.
  3. Serve hot, passing additional stir-fry sauce separately.
